creamy vegan tuna sushi

Ingredients

  • 1 cup sushi rice
  • 100 gr tofu
  • 1/3 paprika
  • 1 avocado
  • 1/2 cucumber
  • 1/2 carrot
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • 1 tsp sesame seeds
  • 100 gr boiled chickpeas
  • 1 tbsp mustard
  • 1 tbsp sriracha
  • 4 nori sheet
  • picked ginger
  • wasabi
  • 2 tbsp soy sauce
  • lara/fermented-chili-sauce

Instructions

Prevent the screen from locking

1. Prepare the sushi rice as indicated on package. Best is to let the rice cool for a few hours before making the sushi. 2. prepare tofu in your favorite way and cut it into thin slices. 3. Cut the paprika, avocado, cucumber in thin slices. 4. grate the carrot and add a bit of soy sauce, sesame oil and optional: sesame seeds. 5. For the vegan tuna, add boiled chickpeas, mustard, sriracha to a blender and mix it into a chunky paste. 6. Prepare the sushi by adding the rice to a nori sheet and placing a little of each ingredient as a line in the middle, on top of the rice. 7. Roll the sushi with a bamboo mat and cut with a sharp and wet knife. 8. Serve the sushi with picked ginger, wasabi and soy sauce. Enjoy! Alternative: experiment with other ingredients or replace the sriracha with fermented hot sauce such as lara/fermented-chili-sauce.
