Ingredients

  • 3 ripe bananas
  • 1 tsp vanilla extract
  • 3 tbsp plant-based milk
  • 2 tbsp chia seeds
  • 3 tbsp grated coconut
  • 250 gr spelt flour
  • 1 tsp baking powder
  • 50 gr walnuts

Instructions

Prevent the screen from locking

1. Pre-heat oven at 180 degrees C. 2. Mix ripe bananas in a mixing bowl until a smooth mix. Beat the mix for a few minutes with a fork or 3. Add vanilla extract, plant-based milk, chia seeds and mix it well together. Let the chia seeds absorb the liquid for a moment. 4. Add grated coconut, spelt flour, baking powder and mix well until the dough is not too sticky and not to dry. 5. Add crushed walnuts to the mix. 6. Pour the dough mix into an cake baking dish and bake it in the oven for 30 minutes until it has a brownish top color. 7. Check with a chopstick if the banana bread is ready, when it comes out almost dry when poking it. 8. Place the bread onto a cutting board and let it cool. 9. Lovely with some peanut or almond butter on top! - For more banana fun: try adding small dark chocolate pieces, chopped dates, or other nuts and dried fruits.
