Tofu quiche
Ingredients
- 1 package quiche dough
- 400 gr tofu
- 1/2 cup nutritional yeast
- 2 tbsp capers
- 1 tsp salt
- 1 tsp pepper
- 1/4 cup lemon juice
- 1/2 thinly sliced leak
- 1/2 can artichoke parts
- 50 gr cherry tomatoes

Instructions
Prevent the screen from locking
1. Pre-heat the oven to 180 degrees C.
2. Place the quiche dough into the baking dish, pinch wholes in the bottom with a fork, put the dish in the oven for 8 minutes to pre-cook the quiche bottom a bit.
3. Add tofu, nutritional yeast, capers, salt, pepper, lemon juice to a mixing bowl and blend it into a smooth paste.
4. Mix the tofu paste with thinly sliced leak and artichoke parts and spread it over the quiche dough.
5. Cut the cherry tomatoes in slices and layer them on top of the quiche.
6. Bake the quiche another 20 minutes or longer until a light brown color.
Enjoy!
Alternative:
1. Add any choice of vegetable to mix with the tofy paste, such as broccoli or spinach.
2. You can use olives instead of capers for the mix.
