vegan white bean & shiitake stew
Ingredients
- 1 onion
- 1 tbsp olive oil
- 1 pinch salt
- 2 tsp balsamic vinegar
- 100 gr shiitake mushrooms
- 2 cloves garlic
- 2 tbsp miso
- 200 ml hot water
- 200 gr white beans
- 30 ml soy cream
- 1 bunch fresh parsley
- 2 tbsp nutritional yeast
- 1 tsp chilli flakes

Instructions
Prevent the screen from locking
1. Caramelize onion in olive oil in a large pan.
2. Add salt and balsamic vinegar to get a slightly sweeter taste.
3. Add some chopped shiitake mushrooms and garlic to the pan and mix it all together. Let it simmer for a few minutes.
4. Add miso, hot water and white beans to the pan and let it stew in low heat for 20 minutes.
5. Mix in the soy cream, fresh parsley, nutritional yeast and mix it well. Add more cream or nutritional yeast if needed.
6. Serve with some chilli flakes on top.

Optional:
1. You can change up the mushrooms or type of beans.. although this combo is magical :)
2. For the caramelized onion you can also use red wine (2 tsp) or sugar (2 tbsp).
